“Farfalle” means “butterflies” in Italian. Pinching two sides of a small rectangle of pasta toward the centre creates soft folds that are great at capturing the flavours of light sauces.

Originally from Lombardy and Emilia, it boasts very ancient origins: according to experts the first version dates back to the sixteenth century.
